The olive-oil sector is unanimously considered a strategic sector for the Tuscan agricultural economy. Not only for the intrinsic value of the oil product, but also for the environmental importance of olive cultivation which strongly characterizes the Tuscan landscape. In many cases the olive tree is also present in difficult areas, otherwise unusable, and contributes effectively to the protection of the territory.
 
The olive groves of Tuscany are therefore of considerable importance in terms of landscape value which is immediately reflected in the concept of integrated rural development, now considered fundamental for the local economy.
 
The pre-eminence of the olive-oil sector in the application of the research tender instrument is therefore not accidental. Through this initiative we attempted to answer some specific questions about the supply chain, with the aim of providing our contribution to a sector which, despite its importance, still suffers from operational difficulties inherent in the nature of the territory itself.
